At last, building construction for the new Wine Bar is finished at Stewart’s at Brookleigh. Manager, Neil Reveler says,

“We are now in a fully air-conditioned space with rustic interiors. It was a major accomplishment to get the demolition work done and re built in 6 weeks (in between weddings). A stellar effort by all concerned – including the Brookleigh landscaping/ maintenance team that worked many long hours to assist with so many aspects of it all. Even Kelly (Event Co-Ordinator) and I were involved in the demo, labouring and painting of the project!”

The a la carte dining room will feature more formal seating while the wine bar will offer different styles for sofas and coffee tables to dining tables and chairs to high bars and stools. 

The new Wine Bar will be open in December/January. Stewart’s will then be offering an extended wine list with many more selections by the glass and bottle, with a lighter style food menu for the Wine Bar. The atmosphere will be relaxed, with candlelit areas to unwind with friends over drinks and light snacks. The intention is to open 7 days a week in the New Year.

Brookleigh is pleased to be able to announce that we will be hosting another Equinology Clinic on 18th – 22nd November. The subject of the clinic will be Equine Lameness and Biomechanics with Dr. Crabbe.

When watching a horse standing still or moving, do you ever wonder what you should be looking for to objectively evaluate conformation, gaits and asymmetry? Do you know the common conformation faults and possible consequences of various defects? Do yoy find yourself contemplating how the muscles, tendons, ligaments and bone produce movement? Can you name the footfalls of the common gaits?

If any of this applies to you , then the upcoming Equinology Clinic on Equine Lameness and Biomechanics with Dr. Crabbe is for you. 

Dr. Barb Crabbe is a 1989 graduate of UC Davis School of Veterinary Medicine, who went on to complete an internship in large animal medicine and surgery at Washington State University. She also did graduate work on Biomechanics at UC Davis, where she studied patterns of locomotion in exercising horses. Currently, she operates her own private equine practice in Portland, with an emphasis on performance horses. Her primary area of interest is in the area of equine lameness and gait analysis, especially as it relates to the dressage horse. 

Dr. Crabbe is a contributing editor to Horse and Rider Magazine and a frequent contributor and member of the advisory board for the Dressage Today Magazine. Her articles have won numerous American Horse Publication awards. She is an avid Dressage rider and competitor, a graduate with distinction from the USDF-L judges program, and serves on the Oregon Dressage Society Board of Directors. 

At this Clinic, Dr. Crabbe will lead you through a mine of valuable information which can help you whether you are an owner, trainer, competitor, equine health care practitioner or farrier. She will present the information in a variety of approaches using specimens, live horses, slides, diagrams and high speed video. 
 
To get the best out of this course, a good knowledge of veterinary vocabulary, anatomy and horse handling skills is required. No matter how you are involved in the horse industry, don't miss this opportunity to improve your skills and build on your knowledge.

Stewart’s at Brookleigh are delighted to announce the appointment of Jamie Skinner as Head Chef.

Jamie was lured to a career in hospitality by the adrenalin rush that comes with working in a busy kitchen. He says the best thing about being a chef is working closely with a tight kitchen crew and always striving for the perfect service. Jamie's philosophy for his modern European cuisine is to remove, rather than to add, concentrating instead on the importance of ingredients of the highest quality with freshness and flavour intact. 

Jamie has a strong belief in using local produce, and he also believes that it's important to support the local community.  Even closer to home, Jamie is lucky to have a team of gardeners on the Brookleigh Estate growing herbs, vegetables and fruits to his specification. 

Restaurant Manager, Neil Reveler says,
“For me the highlights of Jamie’s menus are the fact he tends to reduce ingredients to let the flavours come through and not complicate his food. His presentation is less formal and more “rustic” in appearance.”

The new a la carte menu has been very well received. Some of the highlights are the pork belly (entrée) and the Crab omelette (mains), while the churros for dessert is a real crowd pleaser. Lots of fresh, local produce. A new, separate vegetarian menu is also a big hit!
 
Jamie and Neil’s approach at Stewart’s is to involve all team in all areas of the restaurant – thus creating a true team that can all pull together and help whichever area needs it at any one time.
 
In other news from Stewart’s, the team are very much in the middle of wedding season with as many as 4 or 5 weddings a week at the moment. Also the Christmas party season has started - so reservations during this season are strongly recommended. 
 
Staff are delighted to welcome back Steph Smylie who has been travelling Europe for the past 18 months and is now back at Stewart’s as part of the front of house team.

 

Brookleigh is proud to welcome back Australian-born Olympian Clayton Fredericks for another Eventing Clinic in November. 

Clayton began his career as a young boy, showing the pony he kept in his parents garage. For ten consecutive years, he claimed the Championship title at the prestigious State Show Rider of the Year. He moved on to eventing and immediately clinched the Australian national young rider champion title before he moved to the UK in 1994.

Clayton first rode for Australia at the Open European Championships in France in 1995, but an injury to his horse Bundaberg robbed him of the opportunity to compete in the gold medal-winning team at Atlanta a year later.

After meeting his now wife, Lucinda, Clayton settled in Wiltshire and began the task of building up his reputation on the international competition circuit.
He produced the great eventer Ben Along Time and two years later the pair claimed the World Cup, putting horse and rider firmly into the international picture.

Winning the inaugural World Cup title in 2005 was a turning point in Clayton's competitive career. He went on to take the titles at Chatsworth, Saumur, the British Open Championship and took the individual silver and team bronze medals home from the World Equestrian Games.

At the 2006 World Equestrian Games in Aachen, Germany, Clayton kept his cool under pressure to jump a clear show jumping round, securing the team bronze for Australia and an individual silver medal. In 2007, Clayton finished first in Lexington, second in Deauville, sixth in Burghley and fifth in Luhmühlen. Most of 2007 saw Clayton ranked number one on the World stage.

In 2010, Clayton rode The Frog at Badminton and came third with Be My Guest II at Burghley. Aboard Walterstown Don, Clayton won the CCI** at Malmo and with Sydney Rocks won the Open Novice at Gatcombe and was a runner up at Barocca and runner-up at Fontainebleau on Brookleigh, the 16.3 dark brown gelding, owned by Nikki Brooks, owner of Brookleigh Estate. After the event Nikki said,

“I am stoked and Clayton is too as he said it was easy for him (the horse).Only Saumur to go and he’s qualified for Olympics.”

Clayton is chair of the Event Riders' Association and a trainer. He regularly travels to Germany and Hong Kong to teach, and was team trainer for the Hong Kong team at the 2002 Asian Games.
Clayton is well respected as a trainer across the globe, regularly taking clinics and lessons in the UK, Hong Kong and Australia as well as having two clinics booked in the US for 2011. His easy going, approachable manner ensures that all the riders feel at ease and comfortable, getting the very best value they can from this amazing learning opportunity.

Classes are held on Saturdays, between 8:30-9:30 a.m. in the inspiring outdoor setting of the Brookleigh Estate. Classes cost just $15 per session and all fitness levels are welcome.

 
If you prefer a more quiet and leisurely pace, but still want the results, why not join one of the Yoga classes at Health & Spa at Brookleigh. 

Classes are run on Tuesdays and Saturdays, 11a.m.-12:15 p.m.  Cost is $18/session and all levels of experience can join.
